The 2019 vintage was a difficult year. Lots of rain during harvest time after an almost perfect growing season. We were able to harvest the majority of the Cabernet Sauvignon before the big rains started.
The grapes from the 4 Cabernet Sauvignon blocks were hand harvested in the early morning hours and hand sorted in the cellar before going into the open top fermenters. The wine was punched down 4 x per day for the first part of the fermentation and after reaching 12*B only twice a day.
Soil & Terroir
The soil consists of 38% clay with the balance medium sand to coarse gravel on a northern-western slope for 3 of the blocks. The row direction is 45* west of north. Block 5 is on a flatter piece with substantial rocks.
This wine has intense notes of cloves, black current, leather and cigar box on the nose. The palate has lots of firm tannin, juicy forest berries and a very silky finish.

Goes well with roast pork, red meat, dark chocolate, particularly with red fruit sauce
