This is a 100% Cabernet Sauvignon. The wine has a dense ruby red colour. The nose has sweet red fruit flavours of cherries, boisen berries and raspberries. The taste is youthfull and fresh, layered with flavours of said berries and dark chocolate and pencil shavings finishing dry and balanced.
The 2014 vintage were very fruit forward with soft tannins. The winter of 2013 was very wet which allowed the buildup of very good water reserves. It was cold till late in the season which made initial growth of the vineyards slow. Rain in November caused an increase of decease pressure and increased the spray programs. Rain during end January and beginning February with subsequent warm weather afterwards caused very fast ripening of the grapes and thus sped up the harvesting. We managed to pick our grapes at the right level of ripeness and great colour intensity.
The grapes from the four different blocks were hand harvested in the early morning hours and hand sorted in the cellar before pumped through a mash-cooler to the fermentation tanks. The mash was fermented with Zymaflor F10 and Anchor 372 yeast. The wine was pumped over the skin and punched down 4 x per day for the first part of the fermentation and after reaching 12°B only twice per day. The individual tanks received a full rack and return with aeration at 12°B. Total time spent on the skins did not exceed 15 days. Part of the press juice was added to the free run. The older vineyards did their malo-lactic fermentation in 40% new French oak barrels and 40% third fill barrels. The finished wine was lightly fined before bottling January 2015.
Soil & Terroir:
All of the vineyards are on North facing slopes. The soils consist of rocky clay of 10 to 15 %, which give good water retention ability. Supplementary irrigation was used sparingly and on a needs basis during the growing season.
