A blend of 65% Cabernet Sauvignon, 30% Merlot, 5 % Cabernet Franc.
The 2017 vintage was dry and warm but cooler evenings ensured the slower and more even ripening of the berries. Cool evenings also reduced the effect of the drought and lessened the effect on yield, unlike the 2016 vintage which had heat waves with warm night time temperatures.
The grapes from the four different blocks were hand harvested in the early morning hours and hand sorted in the cellar before pumped through a mash-cooler to the fermentation tanks. The wine was pumped over the skin and punched down 4 times per day for the first part of fermentation and after reaching 12*B only twice a day.
Soil & Terroir
The soil consists of decomposed gravel and sandstone deposits with a clay subsoil resulting in well drained low yielding soil. The aspect is North facing resulting in maximum sun exposure. This allows the berries to ripen perfectly without green herbaceous characters from the Cabernet Sauvignon and Merlot.
This wine is bold, structured and refined. It shows a range in its bouquet which carries through to the palate – from rich fresh fruits and rose to a more serious tobacco, dark plum and blackcurrant leaf that lingers favourably in the aftertaste.
