The 2018 vintage will go down as the driest year in a hundred years record and conditions were very hard for the vines. Due to these conditions we had extremely small crops packed with intense flavours.
Grapes were handpicked at optimal ripeness during the early hours of the morning. It was destemmed and given skin contact in the press to give the juice more complexity. Fermented was in stainless steel tanks at cool temperatures to increase the fruit flavour compounds in the wine. After fermentation wine was left on the lease for an extra couple months with the occasional stir to suspend the lease into the wine release valuable flavor components. Wine is racked off lease filtered and bottled.
Soil & Terroir
This wine is a blend of two regions half is from Stellenbosch a warmer area and the other half came from Napier a cool climate region in the Overberg. Soils are decomposed granite in Stellenbosch and shale in the Overberg.
The 2018 Sauvignon Blanc show great complexity on the nose with hints of Guava, capsicum, gooseberries and a slight flintiness. On the palate the fresh acidity gives it structure, with tropical fruit flavours and a mineral finish.
