The 2019 vintage was very favorable for white wines. Lots of cool breezes and moderate temperatures during ripening backed almost average winter rain. Yield in the block were below average resulting in berries packed with lots of flavor.
Grapes were handpicked at optimal ripeness during the early hours of the morning. It was destemmed and given skin contact in the press to give the juice more complexity. Fermented was in stainless steel tanks at cool temperatures to increase the fruit flavour compounds in the wine. After fermentation wine was left on the lease for an extra couple months with the occasional stir to suspend the lease into the wine release valuable flavor components. Wine is racked off lease filtered and bottled.
Soil & Terroir
This wine is made from Stellenbosch grapes sub region Helderberg, a cooler area resulting in grapes that keeps its acidity. Soils are decomposed granite with patches of sandstone.
The 2019 Sauvignon Blanc show great complexity on the nose with hints of grapefruit, granadilla, gooseberries and a slight flintiness. On the palate the fresh acidity gives it structure, with tropical fruit flavours and a fresh clean finish.
