The 2020 vintage was a bit cooler than 2019, more rain during the ripening of the grapes, resulted in wines with higher acidity and freshness. Yield was a bit higher as a result of good winter and spring rains.
Grapes were handpicked at optimal ripeness during the early hours of the morning. It was destemmed and given skin contact in the press to give the juice more complexity. Fermented was in stainless steel tanks at cool temperatures to increase the fruit flavour compounds in the wine. After fermentation wine was left on the lease for an extra couple of months with the occasional stir to suspend the lease into the wine. Wine is racked off lease unfiltered and bottled.
Soil & Terroir
This wine is made from Stellenbosch and Elgin grapes from cooler regions resulting in grapes that keeps its acidity. Soils are decomposed granite with patches of sandstone.
The 2020 Sauvignon Blanc show great complexity on the nose with hints of grapefruit, granadilla, black current and a slight flintiness. On the palate the fresh acidity gives it structure, with tropical fruit flavours and a fresh clean finish.
