Winemaker’s comment
A blend of 47% Cabernet Sauvignon, 37% Cabernet Franc, 16% Merlot
Windy growing and ripening periods resulted in smaller berries, which leads to good concentration of both colour and flavour making 2020 a great year for red wines.
Vinification
the grapes were hand harvested in the early morning hours and hand sorted in the cellar before being crushed. The wine was pumped over the skin and punched down 4 x per day for the first part of the fermentation process. After reaching 10*B it is only punched down twice a day.
Wine was matured in 300l French oak barrels for 18 months.
Soil & Terroir
The soil consists of decomposed gravel and sandstone deposits with a clay subsoil resulting in well drained low yielding soil. The aspect is North facing resulting in maximum sun exposure. This allows the berries to ripen perfectly without green herbaceous characters from the Cabernet Sauvignon and Merlot.
Tasting note
This wine shows notes of cigar box, tobacco leaf, pencil shavings, graphite and blackcurrant on the nose. The palate has a lot to give with big bold tannin structure and notes of cedar wood on the nose. Great to consume when its young and will age beautifully.
