Winemaker’s comment:
The 2021 vintage started about 2 weeks later and ended well into April due to the slow ripening season. This resulted in grapes full of natural acid and amazing flavours and exceptional colours. Low alcohol fermentation resultest in wines with a lot more finesse and elegance.
:Vinification:
Grapes were handpicked at optimal ripeness during the early hours of the morning. Whole bunch pressing was done to give the juice more complexity and colour. Fermented was in stainless steel tanks at cool temperatures to increase the fruit flavour compounds in the wine. After fermentation wine was left on the lease for an extra couple of months. Malolactic fermentation was done in tanks as well. Wine is racked off lease no filtration is done before bottling.
Soil & Terroir:
This wine ( Merlot ) comes from the farm grapes allocated specifically to produce this rose. The soil is from decomposed granite to sandy loam soils. Terroir falls in the Mediterranean category, resulting in a lot of dry sunny weather during the summer months ensuring that the wine is full of ripe juicy flavours.
Tasting note:
Wine shows notes of strawberries, raspberries, ripe cherries. On the palate it is creamy with a fresh smooth finish. Easy drinking for a warm summer’s day. This wine may contain natural sediment and is not harmful or effects the wines flavour profile.
