Winemaker’s comment

The 2021 vintage started about 2 weeks later and ended well into April due to the slow ripening season. This resulted in grapes full of natural acid and amazing flavours. Low alcohol fermentation resulted in wines with a lot more finesse and elegance.


Vinification:

Grapes were handpicked at optimal ripeness during the early hours of the morning. It was destemmed and given skin contact in the press to give the juice more tannin structure.Fermented was in stainless steel tanks at cool temperatures to increase the fruit flavour compounds in the wine. After fermentation wine was left on the lease for an extra couple of months with the occasional stir to suspend the lease into the wine. Wine is racked off lease unfiltered and unfined into bottles.


Soil & Terroir

This wine is made from Stellenbosch bush vines found on the Devonvalley south facing slopes and Elgin grapes that keep its natural acidity. Soils are decomposed granite with patches of sandstone.


Tasting note

The 2021 Sauvignon Blanc show great complexity on the nose with hints of grapefruit, granadilla, black current leave and guava on the nose.On the palate the fresh acidity gives its backbone, with a very slight tannin structure that makes this wine a bit fuller.The wine may contain natural sediment and is not harmful or effects the wines flavour profile.
